0.61kbStep One - Pare Vegetables

Place the medium kettle on the stove with about 4 quarts of water. Wash your vegetables and place all the peelings in it to cook over medium heat. This makes a great vegetable stock. I don't use it in these recipes, but I save the strained stock to use with my Roast Beef Recipes or on my Master Roast Beef Cooking Day. I add to the stock-pot over the course the day - things like the juice from canned beans, or when I drain vegetables like corn or green beans. When I come from the store I add all my salad vegetable parings to it. This will include radish tops, carrot tops, the core from lettuce, celery leaves, etc. Just do not use anything that may be poisonous like tomato leaves or potato eyes and green parts. This also makes a great base for vegetable soup.

Step Two - Make Crumbled Beef Mixture

In a large kettle place 10 pounds of ground chuck. Chop 2 onions (optional) and place them in with the beef. Cook over medium heat while stirring and chopping occasionally. Add 1 Tbs.salt and 2 tsp. pepper or according to your taste. In the meantime,...

Step Three - Make Italian Meatloaf Master Mix0.61kb

Mix the following in a large bowl:

5 pounds ground beef
4 cups fresh bread crumbs
2 cups tomato sauce
1 minced onion
1 chopped green pepper
3 cloves garlic
1 Tbs. basil
1 Tbs. oregano
1 Tbs. salt
2 tsp pepper

Use the Italian Meatloaf Master Mix in any of 4 of the delicious recipes here. Label and freeze as directed.

0.61kb Step Four - Make Everyday Meatloaf Master Mixture

...mix the following, in the unwashed large bowl from Step One, until thoroughly blended. Don't forget to stir and chop the beef cooking on the range-top every now and then.

5 pounds ground beef
3 cups oatmeal
4 eggs
1 chopped onion
2 cups tomato sauce
1 Tbs. salt
2 tsp pepper

Use the above in any 4 of these yummy recipes. Wash the large bowl.

Step Five - Package Cooked, Crumbled Beef0.61kb

By now the beef cooking in the kettle should be done. Place the colander inside the clean, large bowl. Pour the cooked beef into it to drain. Place the bowl in the refrigerator. Use 10 cups for use in these quick and easy recipes or these casserole and filling recipes, or package them in zipper bags in 1 cup amounts to use later.

Step Six - Make Italian Meat Sauce

To the rest of the cooked beef add the rest of the large can of tomato sauce (6# 9 oz.). Remove 6 cups into a large bowl. Saute; then add the onion, green pepper, 3 cloves garlic. Season to taste with basil, marjoram, oregano, etc. Let this simmer for about a half hour. This makes about 10 cups of sauce for use in these great Italian Recipes.

Step Seven - Make Chili

Now all that's left to do is to add the 3 cans of beans and some chili powder to the rest of the sauce in the pan. Package this in 2 cup containers. You will have 10 bags to use as is or for these tempting Mexican Recipes.

0.61kbStep Eight - Clean Up Your Mess.

Wash the few bowls, pots and pans. I usually do this as I go. Make sure everything is labeled and wrapped securely. It also helps to make a master list of what you have just added to your freezer. I stick this in my cardfile or on the front of the refrigerator and as I use an item from the freezer, I mark it off. Take the cooled beef juices from the refrigerator and remove the fat from the top. Put the rich broth in your vegetable stock pot. Freeze in 1 cup quantities to use in soups and casseroles in place of water.

Step Eight - Bonus For the Birdies 0.61kb

Line a 4-cup, plastic container with plastic wrap; then place some netting over this. (I use the netting from my onion bag.) Fill it with bird seed. Melt the fat left over from step 7 and pour this over the seeds. Cover and store in freezer. To use, gather the netting in a bunch and tie securely. Hang in a tree for the birds this winter.
